Cold Brew Tea Pairing Guide

Dragonwell Green Tea with Lychees
The fresh, nutty flavours of this famous green tea lends itself well to juicy seafood dishes like langoustines but also the similar juicy nature of fruit like lychees that have a slight salinity to them. Dragon Well green tea also tastes fantastic when paired with white fish or simple noodle dishes. When paired with fruit, enjoy in the late morning, or serve this cold brew green tea at lunch.

Organic Japanese Gyokuro with Figs
The inherent meadow-floral quality of a good gyokuro pairs well with ripe figs, combining deep savoury noted with seductive sweetness. Dip the figs in dark chocolate and you’ve got yourself a real experience, which is what gyokuro is traditionally for: savouring slowly perhaps just once a day, so it can’t hurt to elevate the moment with a little something more.

Wuyi Oolong with Amarena Cherries
The natural notes of smoky caramel that shine through a good Wuyi Oolong are ideal for pairing with foods like milk chocolate, coffee desserts (hello tiramisu) and also sticky, syrupy Italian amarena cherries, particularly with a cold brew tea, harmonising with the teas cool and bright clarity. This combination is a simple, elegant alternative to making a whole dessert for your guests.

King of Puerh with Wild Mushrooms
They don’t call Pu Erh Tea an acquired taste without reason. These teas, depending on which, boast earthy notes, leather, tobacco, spice… all things dark and mysterious. All Pu Erh comes from Yunnan and we often recommend wild mushrooms to pair with, also originating in this region and central to their cuisine. A cold brew Pu Erh tea has less astringency and tannins, so its earthier notes truly shine and complement mushrooms nicely.

Milk Oolong with Pineapple
The natural sweetness of our Milk Oolong comes into its own in a cold infusion, particularly the notes of vanilla which pair wonderfully with chunks of ripe pineapple on a hot day. You can even add the pineapple to the infusion once it’s finished brewing and leave it for half an hour before enjoying. The way the tea soaks into the fruit makes enjoying it even more cooling and delicious. Perfect for the garden, beach or balcony.

Yellow Tea Buds with Oysters
This stunning yellow tea from Guizhou, China, is scarce and so must be savoured. Formed of small, light pins covered in young, downy hairs, our Yellow Tea Buds produce a light yellow, almost oily cold infusion with delicate flavours of sour plum and fermented citrus. Paired with the salinity of fresh oysters, the cool energy of the tea is the perfect beverage to enjoy a refined, cleansing moment before a larger meal.

We discovered this one quite by accident in the office when we were playing around with flavour combinations. It quickly became the team favourite, enjoying plump, red strawberries alongside the nutty, roasted notes of this popular Japanese tea, making it a satisfying and cooling beverage to enjoy in the late morning or when you need something sweet to pick you up.

Organic White Peony Bai Mu Dan with Truffled Cheese & Honey
A cold brew Organic White Peony Tea is quite the experience. The inherent notes of cucumber and melon shine through and lend themselves incredibly well to pairing with soft cheeses. For this guide, we chose a ripe truffle brie, and drizzled it with honey to complement the honey notes that emerge in the tea too. This one’s for the end of a long lunch when you’ve decided that just a little cheese is a good idea but you also need refreshing and easing.

Organic Matcha Ceremonial Grade Fuji with Caviar
We’ve always said that this grade of our Matcha is best suited to connoisseurs for its complex tasting notes and satisfying astringency. When made cold, however, only the sweetest notes of young green vegetables come through, pairing surprisingly well with, well, caviar of all things. There’s something about the light umami of the cold brew Matcha with the intense saltiness and umami of the caviar. Both coat the mouth nicely but a final floral note from the Matcha wins to linger on the palate at the end.

Smoky Lapsang Souchong with Jamon Iberico
Cold Brew smoky lapsang souchong is surprisingly fruitier than its hot brew brother, which is why we would recommend it with a plate of excellent quality jamon iberico, pairing well with the marbled, fatty nature of good cured pork. Enjoy as an aperitif to fully appreciate the depths of the jamon, and let the cleansing nature of this tea and its fruity character enhance the deliciousness.
