Matcha Summer Spritz

Ingredients
- 3g of AVANTCHA Organic Matcha Cocktail Grade Kagoshima
- 6 kaffir lime leaves (3 to muddle, 3 for cocktail)
- 90ml Yuzu juice (or 3 limes)
- 100ml vodka
- 500ml soda water
Garnish
- 1 lime
- 1 kaffir lime leaf (twist for extra zing)

Directions
- Sift the AVANTCHA Organic Matcha Cocktail Grade Kagoshima powder into bowl or press whisk down several times to break up and loosen the powder.
- Add 50ml of water (75°C) and whisk briskly.
- Muddle 3 kaffir lime leaves then add in your yuzu or lime juice and gently muddle more to combine and infuse the yuzu.
- Fill a large pitcher with ice and pour over the Matcha. Pass the yuzu and kaffir leaves through a sieve and add to the Matcha.
- Add in an extra 3 kaffir lime leaves. You can bruise/twist them to help release and intensify the flavour.
- Add in 100ml of vodka.
- Top up with 500ml of soda.
- Gently stir to combine.
- Serve with a garnish of lime and a kaffir lime leaf.
