Matcha Bubble Tea

Making bubble tea at home has never been easier. You can either get tapioca balls ready made or create your own if you’re feeling fancy and have time. With chewy tapioca balls, any milk of your choosing and our earthy AVANTCHA Organic Matcha Cocktail Grade Kagoshima, this is a fun and tasty twist on the classic superfood drink. Ingredients
Matcha Boba Pearls
- 3g AVANTCHA Organic Matcha Cocktail Grade Kagoshima
- 78ml water
- 65g light brown sugar
- 120g tapioca starch, plus more for rolling and coating the boba pearls
Matcha Sugar Syrup
- 2 tsp AVANTCHA Organic Matcha Cocktail Grade Kagoshima
- 250g caster sugar
- 100ml water
Matcha Boba Tea
- 3g AVANTCHA Organic Matcha Cocktail Grade Kagoshima
- 30ml hot water
- 500ml milk of your choice
- Matcha sugar boba pearls, to taste
- Matcha sugar syrup, to taste

Matcha Boba Pearls Directions
- To prepare the Matcha sugar boba pearls, combine the water and brown sugar in a small saucepan. Heat mixture over high heat until boiling. Reduce the heat to low and mix in half the tapioca starch with a rubber spatula, stirring constantly for 6-8 seconds.
- Remove from heat, add 2 tsp Matcha and mix in the rest of the tapioca starch until a dough forms.
- Place the dough onto a work surface and knead until a smooth dough forms. Work quickly; the dough will dry up if it cools too much.
- Roll the dough into a thin long rod. Cut the rod into small 2cm cubes and then roll the cubes into small balls. If the dough starts to firm up too much, place it in the microwave for about 3 seconds or until it is pliable again.
- Place the boba pearls into a bowl with tapioca starch and 2 tsp of Matcha, then toss to coat. Shake off the boba using a sieve.
- To cook the boba pearls, heat a medium pot of water over medium-high heat until boiling. Add the pearls and then boil for 30 minutes. Remove pan from heat after 30 minutes and let the pearls rest in the water for 20-25 minutes or until translucent and chewy.
Matcha Boba Directions
- While the pearls rest, prepare the Matcha sugar syrup. In a small pan, add the water and caster sugar, then swirl to combine. Place over medium heat and cook until the sugar dissolves and the mixture begins to bubble. Increase the heat to medium-high and boil vigorously to reduce the liquid into a syrup. Remove from heat, allow to cool slightly before whisking in 2 tsp of Matcha.
- Drain the cooked pearls through a fine-mesh strainer. Stir the boba pearls into the matcha sugar syrup.
- To assemble the Matcha boba tea, in a small bowl whisk together 2 tsp Matcha powder and hot water until combined, it should have the consistency of heavy cream.
- To a tall glass, spoon in as many boba pearls as desired and top with the desired amount of Matcha syrup. Add in the ice cubes and then pour milk over the ice, leaving room at the top for the Matcha. Pour the Matcha mixture into the glass, stir to combine and serve.
