Matcha Mascarpone Frosting for Any Pretty Cake

Recipe makes enough Matcha Mascarpone Frosting for one 20cm cake

Ingredients

Method

  • Beat Mascarpone on a medium speed with an electric whisk until just smooth
  • Sift in icing sugar and Matcha and beat again until just incorporated
  • Switch whisk to high speed and pour in the cream, beating until the frosting is light and fluffy – about 1 – 3 minutes (be careful not to overheat as it will split)
  • Use to spread onto a cake or cupcakes, decorating with rose petals and nuts for a pop of colour and a hint of texture
