Matcha lends itself incredibly well to baking and is especially good in recipes that don’t need putting in the oven because it retains all of its colour. Slather this frosting atop any special cake and not only will it visually impress your guests, they’ll love the taste of it too! Here’s how:
Recipe makes enough Matcha Mascarpone Frosting for one 20cm cake

Ingredients
- 3g of AVANTCHA Organic Matcha Cocktail Grade Kagoshima
- 225g Mascarpone cheese
- 65g Icing Sugar
- 240ml Double Cream
Method
- Beat Mascarpone on a medium speed with an electric whisk until just smooth
- Sift in icing sugar and Matcha and beat again until just incorporated
- Switch whisk to high speed and pour in the cream, beating until the frosting is light and fluffy – about 1 – 3 minutes (be careful not to overheat as it will split)
- Use to spread onto a cake or cupcakes, decorating with rose petals and nuts for a pop of colour and a hint of texture
